His principal research activities lie in the analysis, modification and use of carbohydrate polymers, proteins and enzymes in biotechnology in various industries. Professor Kennedy has published some 500 research papers, fifty books, and is a Fellow of the Royal Society of Chemistry and holder of the Royal Society of Chemistry Carbohydrate Award and the Royal Society of Chemistry Meldola Medal.
